Pinto Coconut Toddy Vinegar is made by extracting the sweet sap that flows from the tip of coconut tree-tops. Transferred into earthen pots, a 1000°C heated tile is immersed in which it is allowed to ferment. After two years a deep reddish brown appearance is achieved indicating peak maturity before bottling.
